The yummiest Caramel Popcorn in the entire UNIVERSE { oh ya...I'm totally callin' it that! }

Okay...if the title of this post didn't get your attention than that picture should have! 

Does it not look as DE-LISH as I claim it is!?!

Seriously...NOMANOMANOMANOMA!!!!

But, I can't take credit for this recipe...it belongs to a dear friend of mine...

Just a little back story ~ the three of us have been friends since we were around 14/15 years old and now all three of us have beautiful little DIVAS all around the same age!  How stinkin' awesome is that?!?
It's AWESOMELICIOUS that's what it is!

Okay...back to the
The Yummiest Caramel Popcorn in the entire 
UNIVERSE!!!

 
You will need:

1 cup unpopped popcorn kernels
1 cup butter
1 cup light corn syrup
1 can sweet condensed milk
2 1/4 cup light brown sugar

 Prep:
Line a cookie sheet with wax paper...trust me, do this first!


Then, pop you some popcorn!


 POP goes the first kernel...POP goes the next...then POP, POP...EXPLOSION...there go all the rest!


Melt the butter with a wooden spoon...


 Once melted, stir in corn syrup and milk and then the brown sugar...


Stir, stir, stir, stir and stir while bringing to a boil...
 Boil until your candy thermometer {I love my PC one...LOVE it} reads 220 degrees


If you don't have a thermometer just boil for 3-4 minutes.  
It should look creamy with a light caramel color.  If it is ends up clear you have cooked it too long.

And then pour onto your popped popcorn...


And stir...again, with wooden spoons...


Once the kernels are covered, pour it out on the cookie sheet you first prepped.


Let stand for a bit {ya right...we started picking at it as it was being poured out} and then eat up!
 {If you are making popcorn balls, start making the balls shortly after you pour it on your sheet.}


Now...are you hankerin' for some caramel popcorn now or what?!?
